Stir with wooden spoon

"The Merriam dictionary describes a Homemaker as "one who manages a household as a spouse and parent."


And while these hardworking women of the 1960's didn't get paid for these duties, they took their "jobs" very seriously. So much so, that they even had a club for all the community activities they participated called Haxtun Extension Homemakers Club.

Every year these Northeast Colorado women baked their new and tasty favorites for the community to enjoy through a cookie share, during the Christmas season. Praline drops, Candy Cane Cookies, Pistachio Chocolate cookies, No bake cookie Balls, and Apricot Dessert Bars were some of the standouts in this "homemade" book.

But the one that caught my attention was..........


Christmas Casserole Cookies

2 eggs 1 cup Chopped dates

1 cup sugar 1 cup chopped nuts

1 cup coconut 1/4 tea almond extract

1 tea. vanilla

Beat eggs well. Add sugar gradually beating till fluffy. Stir in remaining ingredients. Turn into a non greased 2 quart casserole dish. Bake 350 degrees for 30 minutes. Remove from oven and stir with wooden spoon. Cool and form into small balls. Roll in sugar.

I believe my mom was in the Extension Homemakers in the early 70s! It was a great place for her to relate to other women her age. I fondly remember the great food she cooked after those meetings. Thank you for the memories!
